Creamy White Chocolate Mousse

Ingredients
- 125g cream cheese, softened
- 2 eggs, separated
- 200g white chocolate, melted (see tip below)
- 300mls cream, semi whipped (do not over whip)
- Raspberries for decoration
- Icing sugar for dusting
Instructions
- Place cream cheese into a medium bowl and beat until smooth. Add egg yolks one at a time, beating well after each addition.
- Beat egg-whites until stiff. Gently stir melted chocolate into the cream cheese mixture until just combined (do not over mix as white chocolate will set). Fold in semi whipped cream and lastly egg-whites; spoon into serving dishes.
- Refrigerate until set for 2 hours. Decorate with fresh raspberries and dust with icing sugar
Hint:
Melting Chocolate: break chocolate into pieces and place into a microwave safe bowl. Microwave on 50% power for 1 ½ - 2 minutes lightly stirring halfway through.
