Ingredients

  • 70g rocket leaves
  • 2 cups frozen Birds Eye Baby Green Beans, cooked and cooled
  • 1/3 cup shaved Parmesan cheese
  • 6 cherry tomatoes, halved
  • 1 small breadstick, sliced and toasted
  • Dressing:
  • 1 tablespoon balsamic vinegar

Instructions

  • Arrange rocket leaves, beans, Parmesan cheese, cherry tomatoes and toasted bread onto a serving platter.
  • Place dressing ingredients into a screw top jar and shake well to combine.
  • Pour dressing over salad just before serving.
Hint:
Parmesan cheese can be purchased shaved or simply shave pieces off a block of cheese using a vegetable peeler.
