Ingredients
- 70g rocket leaves
- 2 cups frozen Birds Eye Baby Green Beans, cooked and cooled
- 1/3 cup shaved Parmesan cheese
- 6 cherry tomatoes, halved
- 1 small breadstick, sliced and toasted
- Dressing:
- 1 tablespoon balsamic vinegar
Instructions
- Arrange rocket leaves, beans, Parmesan cheese, cherry tomatoes and toasted bread onto a serving platter.
- Place dressing ingredients into a screw top jar and shake well to combine.
- Pour dressing over salad just before serving.
Hint:
Parmesan cheese can be purchased shaved or simply shave pieces off a block of cheese using a vegetable peeler.
