Ingredients

  • 500g packet frozen Birds Eye Chopped Onions
  • 2 cups self raising flour
  • 1 teaspoon salt
  • 60g reduced fat butter, diced
  • 1 egg, lightly beaten
  • ¾ cup reduced fat milk
  • 1 tablespoon seeded mustard
  • 2/3 cup grated reduced fat, tasty cheese
  • 2 tablespoons chopped fresh parsley

Instructions

  • Microwave frozen onions on high for 4 minutes. Sift flour and salt into a bowl, add butter and rub in with fingertips to resemble breadcrumbs.
  • Combine egg, milk and mustard and add to flour; mix to form a soft dough. Turn out onto a floured board and knead lightly. Divide mixture into 14 uneven pieces.
  • Place half the dough pieces over the base of a baking paper lined 14cm x 22 cm loaf pan. Sprinkle with half the onions, cheese and parsley. Cover with remaining dough pieces, onions, cheese and parsley.
  • Bake in a preheated oven at 200°C for 40-50 minutes or until cooked through.
Hint:
Best eaten hot and the addition of Kalamata olives or diced bacon makes a tasty change.
