Ingredients

  • 1/3 cup self raising flour
  • 2 tablespoons corn flour
  • 2 eggs, separated
  • ¼ cup reduced fat, milk
  • ½ x 500g packet frozen Birds Eye Super Sweet Corn Kernels
  • 2 spring onions, finely chopped
  • Oil for cooking
  • Sweet chilli sauce for serving

Instructions

  • Sift flours into a bowl; add egg yolks and milk, mixing well.
  • Whip egg whites until stiff and gently fold into flour mixture along with corn kernels and spring onion.
  • Heat a little oil in pan. Drop heaped tablespoons of mix into pan and slightly spread. Cook until golden, flip and cook other side. Repeat. Serve immediately with sweet chilli sauce.
Hint:
Substitute frozen corn kernels for 2 x 420g cans Edgell Super Sweet Corn Kernels, drained.
